Quinoa and Avocado Salad
 
Nutritional Powerhouse. It is really good by itself or served as a wonderful side dish.

Ingredients
 
  • C Quinoa uncooked
  • 1 1/2 C Water
  • 1/2 tsp Sea Salt
  • lg bunch Kale Steamed and chopped
  • 1 lg Avocado Peeled, pitted and chopped
  • 3/4 C Walnuts Chopped
  • lg lemon use the juice from
  • 2 tbsp Extra Virgin Olive Oil
  • Sea Salt and Black Pepper to taste
Servings: 6
 
Instructions
 
  1. Dry toast the Quinoa in a medium pan over medium heat until aromatic, 3 - 4 minutes.
     
  2. Add the water and sea salt and bring to a boil. Cover and reduce heat to low, simmer until all of the water is absorbed and the quinoa is cooked, about 25 minutes. Turn off heat and let the quinoa sit for another 3 - 5 minutes
     
  3. Fluff the quinoa with a fork and transfer to a large bowl
     
  4. Add the steamed Kale, avocado, and nuts to the bowl of quinoa. Add the lemon juice and olive oil, season with the salt and pepper. Lightly toss to evenly coat.
     
  5. Serve chilled or at room temperature. Store leftovers in refrigerator for up to 5 days
     
Recipe Notes

This recipe is an excellent source of protein, calcium, fiber, healthy fats and sodium.
It is also very good with added fresh chopped tomato and red onion.
